Sarah Lihan, Ft. Lauderdale, FL, Laser Radial, just named to the newly launched US Sailing Team – U23 (Under 23).

The Rolex Miami OCR has a track record for high attendance by foreign teams and is the only  International Sailing Federation (ISAF) Sailing World Cup event in the U.S. for Olympic and Paralympic classes.

Established in 1990, this annual event organized by the Olympic Sailing Committee of US SAILING, is sailed on Biscayne Bay and features elite-level competition in the classes selected for the Olympic and Paralympic Games.

Hosts for the event are the U.S. Sailing Center; Coral Reef and Key Biscayne Yacht Clubs; the Coconut Grove Sailing Club; and Shake-a-Leg-Miami.

People always asked me, it goes like this.....Skipper Mike, let me ask you a question....People spend millions of dollars to own a yacht, hundreds of thousands to charter, sometimes I wonder for all that money what could the lucky people on the yachts be having for dinner?  I told many, now I am telling everyone.  They have the best people in the world making the dinners, because they can afford to make it so.  Here is a special look , and the ultra secret special recipe from Mary Beth Lawton Johnson, as a gift to all to show her talents.  The reason why is in the visual, the presentation, and the highly skilled trained expertise and the accomplishment of well satisfied diners that have enjoyed her cuisine around the world.  This is just one of her caviar delights. A CD is in production, containing four more presentations.  And now for your reading pleasure continue & enjoy!  

 

 

 

 

Black River Caviar, Gold, Beet and Borscht Pave

1  12  oz jar of prepared Borscht

 1 lb of mixed yellow and red beets,  scrubbed, rubbed with olive oil, sea salt, roasted in oven , skins,
 peeled, sliced paper thin
fresh beet greens, rinsed thoroughly then braised in 1 cup of good quality beef broth with 1 cup red wine, 

1/4 cup of sugar  reserving 2 very large tablespoons of the braising liquid (can use any greens that you prefer)

 2   2 oz of Black River Caviar

8 gelatin sheets, gold

1 terrine loaf pan

Saran Wrap

 Edible gold

 Creme Fraiche 1 6 oz container

Beet Chips:  Red/Yellow Beet Chips, red beets sliced paper thin, dried in oven until crispy like a potato chip.


Line the terrine with plastic wrap. Bloom the gelatin in cold water for a few minutes. Heat the Borscht and braising liquid from the greens. Squeeze the water out of the gelatin and add to the heated liquid. to dissolve. Fill the terrine bottom to cover with the gelatin mixture. Next add the diced beets, chop the braised beet greens and place on top of the diced beets, next followed by the caviar and top with the remaining liquid borscht gelatin mixture. Cover tightly,  refrigerate overnight. Remove the terrine from the refrigerator and un-mold onto a serving platter. Top with the edible gold, Serve with creme fraiche, red beet chips and more caviar. For plating, take some diced beets, caviar, and edible gold, and paint the plate or sprinkle around.

Notable Yachtsman  -  Roland Jourdain:

Yachtsman Ronald Jourdain.  He is one of the 20 navigators who set sail from the harbour of Les Sables d'Olonne in early November 2008 in the Vendée Globe race which occurs every four years.  The media follows this event of those sailing around the world single-handed, with no ports of call, marking the southern tips of three great capes of the African, Australian and American continents within 3 months.  This event is viewed as something quite normal, a mere sporting event!
